MANGALOREAN BEEF SUKKA

This Beef Sukka is a traditional Mangalorean Catholic style recipe. The recipe is adapted from the Chicken and Mutton Sukka preparations that are native to the coastal regions of Mangalore, Udupi and Kundapur. It is a semi-dry dish made with ground roasted spices and freshly grated coconut. Fresh veggies in honey mustard dressing


I would say this is one of my favourite salads!! That is because it's quick to make, dosen't require any fancy ingredients and you can toss in just about any vegetable that you have in the fridge. 

I like to add some fresh herb to my salads. Here I have used corriander leaves. You could even use fresh mint, basil, parsley or dill.


INGREDIENTS

1 Cucumber

1 Red Capsicum

1 Green Capsicum

1 Yellow Capsicum

1 Small Onion

1 Cup Lettuce

For the dressing

1 tbs Honey

1 tsp English Mustard Paste

1/4 tsp Pepper Powder

2 tbs Olive Oil

Juice of one Lime

2 tbs Chopped Coriander Leaves

Salt to taste


METHOD

  • Chop all the vegetables into bite size pieces.
  • Tear the Lettuce with your hands into bite size pieces. Do not cut it with a knife as it tends to discolor.
  • Add the vegetables into a bowl and refrigerate.
  • In a small bowl whisk together all the ingredients for the dressing.
  • Pour the dressing over the salad just before serving.
