MANGALOREAN BEEF SUKKA

This Beef Sukka is a traditional Mangalorean Catholic style recipe. The recipe is adapted from the Chicken and Mutton Sukka preparations that are native to the coastal regions of Mangalore, Udupi and Kundapur. It is a semi-dry dish made with ground roasted spices and freshly grated coconut. MARINARA SAUCE

 


This is my version of a quick and simple marinara sauce. It tastes much better than the store-bought bottled ones. 

I prefer to keep this sauce a bit chunky and hence i do not puree the tomatoes or peel off their skin. This sauce tastes amazing on pizzas and can be used in various pasta dishes. 

You could make this in advance and store it in the fridge for about 2 weeks or you could freeze it. This way it stays fresh for about a month.

INGREDIENTS:

3 large ripe tomatoes - roughly chopped

50gms tomato paste

1tsp onion powder 

1tsp garlic powder 

2 tbs olive oil / sunflower oil

1tsp pizza seasoning / mixed dry herbs

1- 2 tsp paprika powder

1/2 tsp pepper powder

1tbs sugar

200ml water

METHOD:

1. Heat oil in a saucepan and add the chopped tomatoes and fry. 

2. Once the tomatoes are soft add the tomato paste and all the dry herbs and spices.

3. Add in the water and bring it to a boil.

4. Season with salt and sugar. The sugar helps to balance the acidity from the tomatoes.

5. Continue to boil the sauce for another 10-15 mins stirring it regularly until it thickens and comes together.

NOTE: You could also add some fresh basil if you like.
