MANGALOREAN BEEF SUKKA

This Beef Sukka is a traditional Mangalorean Catholic style recipe. The recipe is adapted from the Chicken and Mutton Sukka preparations that are native to the coastal regions of Mangalore, Udupi and Kundapur. It is a semi-dry dish made with ground roasted spices and freshly grated coconut. Prawn and avacado salad


 This Hearty salad is Fresh and Refreshing. Perfect as a meal on its own or can be served as a side. It is Creamy, yet so Healthy. The base for the dressing is Greek yogurt and not Mayonnaise. So go ahead and enjoy this creamy salad without worrying about the calories.


INGREDIENTS

2 English Cucumbers, Cut Into Cubes

2 Large Ripe Tomatoes, Cut Into Cubes

1 Small Onion, Chopped

1 Avacado, Cut Into Cubes

250 gms Prawns, Peeled & De-veined

2-3 Spring Onions, Finely Chopped

1/4 tsp Salt

1/2 tsp Garlic Powder

For The Dressing

3-4 tbs Greek yogurt

2 tbs Olive Oil

1tsp Honey

1/2 tsp Pepper Powder

Juice Of Half A Lime

Salt To Taste



METHOD

  • Marinate the prawns with the garlic powder and salt for about 15 minutes.
  • Fry them in a pan with a little oil. Do not over cook them. Cool completely.
  • In a small bowl combine all the ingredients for the dressing and mix well.
  • Combine all the chopped vegetables and the prawns in a large bowl.
  • Add the prepared salad dressing and mix well.
  • Check for seasoning.
  • Serve chilled.
