MANGALOREAN BEEF SUKKA

This Beef Sukka is a traditional Mangalorean Catholic style recipe. The recipe is adapted from the Chicken and Mutton Sukka preparations that are native to the coastal regions of Mangalore, Udupi and Kundapur. It is a semi-dry dish made with ground roasted spices and freshly grated coconut. Roasted bellpepper salad

 


Bellpeppers are known to be low in carbs and are rich in Nutrients. This colorful Bellpepper salad is uplifting and refreshing. The sweetness of the peppers is perfectly complimented by the Garlic-Yoghurt dressing. Serve this salad as a side with some grilled chicken or fish.


INGREDIENTS

Bellpeppers - Red, yellow and Green

1 English Cucumber - Optional

Mint Leaves For Garnish

For The Dressing

2-3 tbs Greek Yoghurt

2 Cloves of Garlic

2 tbs Olive Oil

Salt To Taste


METHOD

  • Roast the  bellpeppers on direct flame till the skin is charred.
  • Transfer to a bowl and cover with a tea towel till completely cooled.
  • Peel off the charred skin and cut lengthwise.
  • Blend all the ingredients for the dressing till well combined.
  • Arrange the slices of roasted bellpeppers and cucumber on a serving plate and pour the dressing over.
  • Garnish with mint leaves and some olive oil.
