MANGALOREAN BEEF SUKKA

This Beef Sukka is a traditional Mangalorean Catholic style recipe. The recipe is adapted from the Chicken and Mutton Sukka preparations that are native to the coastal regions of Mangalore, Udupi and Kundapur. It is a semi-dry dish made with ground roasted spices and freshly grated coconut. Chicken and ham salad



Chicken, Ham & veggies tossed in creamy mayo dressing, Served on a bed of fresh Lettuce.

I have used pork ham for this recipe. You can substitute that with some bacon or Chicken ham/ coldcuts.



INGREDIENTS

250 gms Boneless Chicken

200 gms Ham

1 Cucumber, Chopped

1 Large Tomato, Chopped

1 Capsicum, Chopped

1 Small Iceberg Lettuce

2 Red or Green Chillies, Sliced & De-Seeded

5-6 Spring Onions, Chopped

For The Dressing

5-6 tbs Mayonnaise

1 tsp Mustard Paste

Juice Of Half a Lime

1-2 tsp Sugar

1 tsp Worcestershire Sauce

2 tbs Olive Oil

1 tsp Garlic Powder

Salt to taste

For The Marinade

2 tbs Worcestershire sauce

1/2 tsp Pepper Powder

Juice Of Half A Lime

1 tbs Olive Oil

1/2 tsp Salt

Mix all the ingredients for dressing in a bowl






METHOD

  • Mix all the ingredients for the marinade and marinate the chicken for half an hour.
  • Chop up the ham and fry for 2-3 minutes on high flame. Take it out into a plate and let it cool.
  • In the same pan heat some olive oil and fry the chicken. Once it cools slice it up into bite sized pieces.
  • In a small bowl combine all the ingredients for the dressing and mix well.
  • Add all the chopped vegetables, chicken and ham into a bowl. Pour in the dressing and toss till well combined. Check for seasoning.
  • Refrigerate for atleast half an hour.
  • Line a salad bowl or serving platter with the lettuce.
  • Place the chicken and ham salad over the lettuce just before serving.
