MANGALOREAN BEEF SUKKA

This Beef Sukka is a traditional Mangalorean Catholic style recipe. The recipe is adapted from the Chicken and Mutton Sukka preparations that are native to the coastal regions of Mangalore, Udupi and Kundapur. It is a semi-dry dish made with ground roasted spices and freshly grated coconut. The dish goes perfectly well with Neer dosas and boiled rice.   INGREDIENTS 1 Kg Boneless Beef  (Preferably with Little Fat)  1 Medium Sized Onion, Sliced 5-6 Cloves of Garlic, Bruised 1" Ginger , Bruised 4 Cloves  1" Cinnamon  1/2 tsp Whole Peppercorns   2 tbs vinegar  200 gms Grated Coconut For Tempering 2 tbs Ghee  2 Sliced Onions  2 Sprigs of Curry Leaves Salt to Taste For The Masala Paste   10- 12 Byadgi Chillies 3-4 Round Chillies  2 tbs Coriander Seeds 1 tsp Cumin Seeds  1 tsp Whole Peppercorns  1/4 tsp Fenugreek Seeds 1" Cinnamon 4-5 Cloves  1/2 tsp Tumeric Powder  Marble Sized Ball of Tamarind METHOD Clean and cu...

Prawn butter garlic

Succulent Prawns tossed in with crisp bits of Garlic fried in Butter. This Prawn Butter Garlic recipe is really easy and takes less than 30 minutes to make. Use fresh Medium or Large sized prawns to get the best flavour. I have batter fried the prawns prior to adding them to the Butter Garlic. You could avoid this step if you want and directly fry the prawns in the Butter garlic mixture.

INGREDIENTS

1 kg Prawns, Medium to Large Sized

2 tbs Salted Butter

2 Pods Of Garlic, Roughly Chopped

Half Cup Chopped Spring Onions

Oil For Deep Frying

For The Batter

1 Egg

3 tbs Corn Flour

1 tbs Maida

1/4 tsp Pepper Powder

Salt to Taste

Water As Required

METHOD

  • Peel, de-vein and wash the prawns well.
  • In a bowl whisk the egg and add the rest of the ingredients for the batter and combine well.
  • Do not make the batter too thick or too runny.
  • Heat sufficient oil in a pan.
  • Dip the Prawns one at a time in the batter and deep fry till golden brown.
  • Do not over crowd the pan. Fry only 5-6 prawns per batch.
  • Take them out on a kitchen napkin to drain out excess oil.
  • In another pan heat butter and fry the chopped garlic till it turns golden brown.
  • Add half the spring onions and fry for a minute.
  • Add in the fried prawns and toss till well combined.
  • Check for seasoning. If required season with some salt.
  • Garnish with the remaining spring onions.
