MANGALOREAN BEEF SUKKA

This Beef Sukka is a traditional Mangalorean Catholic style recipe. The recipe is adapted from the Chicken and Mutton Sukka preparations that are native to the coastal regions of Mangalore, Udupi and Kundapur. It is a semi-dry dish made with ground roasted spices and freshly grated coconut. Mangalorean Beef Roast

 


This splendid Beef Roast is a family recipe. Tender slices of beef stir fried & served with a side fried potatoes. The secret ingredient here is the Mangalorean stew powder. The stew powder gives this dish its robust flavour and spice.

INGREDIENTS

1kg Beef (Boneless)

2-3 Medium Onions, Sliced

3-4 Green Chillies

2-3 Medium Tomatoes, Sliced

Small Handful Of Corriander Leaves, Chopped

8-10 Cloves of Garlic, Julienned

2 Inch Ginger, Julienned

2-3 Large Potatoes, sliced

2 tsp Mangalorean Stew Powder**

2 tbs Soya Sauce

1-2 tbs Tomato Ketchup

Salt to Taste 

For The Marinade

2-3 tbs Vinegar

1 Inch Cinnamon

 4-5 Green Chillies, Slit

1 tbs Mangalorean Stew Powder 

Half tsp Haldi Powder

1tsp Salt 

1 Inch Ginger, Bruised

5-6 Cloves of Garlic, Bruised


Fried Potatoes and Sliced Cooked Meat



METHOD 

  1. Marinate beef with with all the ingredients for the marinade overnight. Or for atleast an hour.
  2.  Pressure cook till meat is cooked. Cool and cut into slices.
  3. Reduce the stock from the pressure cooker to less than half the quantity and set aside.
  4. Salt the sliced Potatoes and shallow fry them in a pan. Set aside.
  5. Heat some oil in a vessel, fry the green chillies,ginger and garlic.
  6. Add the onions and fry till translucent.
  7. Now add the cooked meat and fry for about 2-3 mins.
  8. Add the stew powder,soya sauce and ketchup and mix.
  9. Next add the beef stock and tomatoes, bring to a boil.
  10. Cook till the stock thickens.
  11. Mix in the chopped coriander and garnish with the fried slices or wedges of potatoes.
